Chicken salad dressing

Makes 1 1/2 cups

1 cup macadamia nut oil
1/4 cup white balsamic vinegar (lemon juice would do, too)
1 tablespoon Pommery mustard
1/4 cup scallions, white part only, chopped
Salt
Black pepper, freshly ground


    Combine all the ingredients in a stainless steel bowl and mix well.
