Garlicky greens

Serves 4

1 pound fresh spinach (about 12 cups)
1 teaspoon extra virgin olive oil
3 cloves garlic, peeled and minced


    1. Wash the spinach well and remove the stems.
    2. Heat the olive oil over medium heat in a large nonstick skillet. Add the garlic and cook, stirring constantly for 1 minute. Add the spinach to the skillet and continue to cook for 3 or 4 minutes, or until wilted.

    Per serving: Calories 38, protein 3 g, carbohydrates 5 g, fiber 3 g, fat 2 g (monounsaturated 1 g, polyunsaturated trace, saturated trace), sodium 90 mg
