Serves 4
  1 head romaine lettuce, finely chopped
  2 cucumber, peeled and chopped
  4 vine ripe tomatoes, small dice
  1 red onion, small dice
  1 bunch scallions, sliced thin
  3 tablespoons fresh mint, rough chopped
  
DRESSING
  4 tablespoons olive oil
  2 lemons, juiced
  1/2 teaspoon salt
    Prep all vegetables and mint and combine in bowl. In a small bowl combine dressing ingredients and mix well; add to bowl with vegetables and toss.
